Peanut Butter Balls

Yield: About 32 balls

Ingredients:

    1 cups peanut butter (pref. crunchy)
    1/4 cup butter or margarine
    2 cups icing sugar
    1.5 cups Rice Crispies
    1 package of chocolate chips (or: several pure chocolate bars)

Method:

    1. Mix everything together.
    2. Roll into balls, approx 3/4″ diameter.
    3. Chill for 1-2 hours in the fridge.
    4. Melt chocolate in the microwave, and dip balls in. Let solidify on a parchment paper covered baking sheet. Keep refrigerated.

Comments:

These, my friends, THESE are the shit. You will seriously be sick to your stomach if you eat the whole batch in one day (I mean it, a cup of peanut butter is a lot), but the first few are really good. My mom always made these for bake sales in elementary school, and they always sold out immediately. They’re really simple to make, yet hardly anyone has heard of them before, so they’re novel.

Sadly, shortly after I graduated, the school really cracked down on peanut products due to allergies and what-not, so she wasn’t allowed to make any for my sister’s years there. Their loss. Recently I was talking to my mom about these, and how I would have died if I had to go through the school system again since PB&J was the only thing I ate for 10+ years (and still one of only 2 or 3 things I bring to work). The Lewis Black stand-up sketch was mentioned “Hey, if your kid is so allergic that they can’t even have someone else eating it on the other side of the room… your kid’s not going to make it.”
