Odds are, if you own a waffle iron you know how to make them, you just need the ingredient list. This recipe was originally 4 times the size (to make 20 waffles) but I had to cut it down since even for a family of 5 that’s a ridiculous amount of batter.

Gluten Free:

In our adventures with Celiac, I had to make a gluten-free version of these. They are actually quite good, unlike my attempts at making gluten free bread (though this is in part because waffles aren’t supposed to activate the gluten much in the mixing, so it’s easy to do without). The recipe changes to the following for my gluten-free version:

1 cup gluten-free flour blend (3/4 cup corn flour, 1/8 cup potato flour, 1/8 cup rice flour)
1.5 tbsp sugar
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2/3 cups milk
2 tbsp oil (you can stick with 3, but I found it wasn’t needed)
1 egg
1/4 tsp Xantham gum

I don’t think there’s any need to let the batter sit for the gluten free version, so go ahead and pour as soon as the waffle iron is hot.

Yield: 4-5 waffles Ingredients: 1 cup flour 1 tbsp sugar 1.5 tsp baking powder 1/2 tsp salt 1/4 tsp baking soda 3/4 cups milk 3 tbsp oil 1 egg Method: 1.
