Cucumber Salsa

1 cucumber (peeled, seeded, and chopped into small cubes)
1 tomato (chopped into small cubes)
2 tbsp finely chopped red onion (should be <1/2 the size of the cucumber)
2 tbsp lemon, lime, or grapefruit juice
2 tsp olive oil
1/2 tsp finely chopped parsley
1/2 tsp finely chopped cilantro
1/4 tsp salt
1/2 tsp black pepper
1/4 tsp ground cayenne pepper
Method:
1. Chop and mix, that’s all there is to it!
Comments:
This cucumber salsa was just about the only new food I really liked on my trip to Cancun. This is my first attempt at reproducing it. I’m not quite there, but this is nonetheless a very passable attempt. Goes great with yellow corn nachos, especially ones that are just lightly salted. Add sweet red, orange, or yellow peppers for more colour.

I’m not so sure about any recipe where I have to remove the seeds from a cucumber.

Why’s that? Just cut it down the middle into 4 strips, then cut the strips at an angle to get rid of the seeds (or in the case of my seedless cucumber, the gooey centre where the mal-formed seeds would be).
